  • Aglio Olio with Beef Tapa and Poached Egg

    What is Aglio Olio?

    Spaghetti aglio olio (“spaghetti with garlic and oil” in Italian) is a traditional Italian pasta dish coming from Naples.

    The dish is made by lightly sauteeing sliced, minced, or pressed garlic in olive oil, sometimes with the addition of dried red chili flakes, and tossing with spaghetti. Finely chopped parsley can also be added as a garnish, along with grated parmesan or pecorino cheese, although according to some traditional recipes, cheese should not be added.

    Many New York Italian-Americans refer to aglio olio as “alla-ul” due to the influence of Southern Italian pronunciation in the area.

    Beef tapa is often served tapsilog style (tapa, fried rice and fried egg).  This recipe shows us a different way to serve beef tapa.  We need to cook the beef tapa in advance prior to preparing this pasta dish.  Check out the beef tapa recipe HERE.

    You will need poached eggs for this recipe.  Below is a video from YouTube (not mine) that shows how to prepare poached eggs:

     

    Ingredients:

    Instructions:

    1. Make the beef tapa (recipe is HERE)
    2. Shred the beef finely.
    3. Cook the pasta and set aside.
    4. In a saute pan, heat the olive oil in medium.
    5. Add the garlic, chili flakes, and a pinch of salt.
    6. Add the cooked pasta and toss well.
    7. If needed, add pasta water.
    8. Drizzle with extra virgin olive oil.
    9. Carefully spoon the poached egg onto the tapa or pasta.
    10. Garnish with Parsley (if desired).
    11. Serve.

    • 300 grams cooked beef tapa (shredded)
    • 400 grams Spaghetti Noodles
    • 4 cups Water
    • Olive oil (as needed)
    • 12 cloves Garlic (peeled and minced)
    • 1 tsp Chili Flakes
    • 30 mL Extra Virgin Olive Oil
    • 30 grams Flat Leaf Parsley (finely chopped (optional))
    • 4 pcs Poached Egg
    • Salt (to taste)
    1. Make the beef tapa.

    2. Shred the beef finely.

  • Easy Fried Rice Recipe | Bacon and Hotdog Fried Rice

    Here is an easy fried rice recipe.  Most of the stuff you will be needing to cook this recipe is in your freezer and your pantry.

    One day wife was away on a trip and I needed to do the cooking.  Unfortunately, I was too lazy to cook and decided to just fry some meat for dinner.  As I was checking what was on the fridge, I saw we had lots of left-over rice.  The rice was a good candidate for this easy fried rice recipe.  I checked the freezer and we had Purefood hotdogs and a packet of Purefoods Bacon Crumble.  This gave me an idea.

    We also had a packet of frozen mixed vegetables in the freezer.  Perfect!  In the pantry, I found eggs.  I am good to go!

    Instead of plain bland fried meat for dinner, I was able to serve something special with this easy fried rice.

    Ingredients:

    • 4 cups cooked rice
    • 5 pieces hotdog, sliced
    • 1/2 cup Purefoods Bacon crumble
    • 1/2 cup frozen mixed vegetables
    • 2 eggs
    • 1 tbsp. cooking oil
    • salt and pepper

    Instructions:

    1. Heat oil in a wok or deep frying pan.
    2. Add the bacon crumble and cook until fat is rendered.
    3. Add the hotdogs and let cook.
    4. Add the frozen vegetables.  Mix well.
    5. Add the rice and mix thoroughly.
    6. Season with salt and pepper.
    7. Crack the eggs and pour on the rice mixture.  I find that pre-scrambling them is an unnecessary step. They get scrambled just fine when you mix them into the rice.
    8. Serve and enjoy!

    Easy Breakfast Sliders

    Easy Breakfast Sliders are filled with ham, egg, cheese and onions stuffed between mini rolls. They are baked in the oven until warm and golden and make a hearty and filling breakfast that will feed a hungry family.

    breakfast slidersThis is just a simple breakfast sliders recipe.  An interesting trivia before I continue.  I was eating breakfast in a fastfood joint and there was a couple beside me.  The guy was explaining stuff to the girl.  He was doing all the talking while the girl was just listening.  Because the guy was talking so loud, I couldn’t help but overhear everything.  My favorite part was when the guy was explaining the importance of breakfast, why it was the most important meal for the day.  He goes like this:  Why is this called breakfast?  Because you are breaking fast, your last meal being dinner and then you slept.  Makes sense?  Very authoritative explanation of breakfast?  Hahaha!  Breakfast is breaking fast – I was hoping for a better explanation.  So now I apply this statement to my wife and kids, with a very knowledgeable and authoritative approach.  I will start with, according to my research….

    Ok, let’s go back to the recipe.  This Breakfast Sliders recipe is very easy as all you need are scrambled eggs, ham slices, onions, cheese slices, melted butter and pepper.  Plain and simple!  Try this at home and your family will love this.  The pictures are almost self explanatory too.

    Ingredients

    • 1 pack Marby mini dinner rolls
    • 4 eggs, scrambled
    • ham slices, enough to cover dinner rolls (I used 4)
    • 1 large onion, sliced into rings
    • cheese slices, enough to cover dinner rolls (I used 6)
    • 1 TBSP melted butter
    • Pepper, to taste

    Instructions

    1. Slice dinner rolls in half horizontally.
    2. Spread the scrambled eggs on the bottom half of the dinner rolls.breakfast sliders
    3. Add ham slices.
    4. Add sliced onions on top, distribute evenly.breakfast sliders
    5. Cover with Cheddar cheese slices.breakfast sliders
    6. Cover with the top part of the dinner rolls and pour melted butter, sprinkle pepper.breakfast sliders
    7. Bake at 375 deg F for 20 minutes.

    Breakfast Sliders. An interesting breakfast consisting of eggs, ham and cheese. A good start to your day. Similar to ham and cheese sliders.

    • 1 pack Marby mini dinner rolls
