  • Beef Tapa | Filipino Beef Tapa Recipe

    Beef tapa is a type of cured meat of thin slices of tender beef.  Filipinos prepare beef tapa by using thin slices of meat. The meat is cured with salt and spices as a preservation method.  Beef tapa is often cooked fried.  Beef tapa is a popular breakfast that is usually served with fried egg and fried rice. The combination of fried beef tapa, fried egg and fried rice is Tapsilog. That is short for TAPa, SInangag (fried rice), ItLOG (egg).

    Ingredients:

    Instructions:

    1. Combine the Knorr Liquid Seasoning, cracked black pepper, brown sugar, half of the minced garlic, Knorr Rostip Chicken Seasoning Powder, chili flakes, and Knorr Tamarind Soup Base in a bowl.  You may adjust the seasonings according to your preferred taste.
    2. Pour this marinade over the beef and marinate for a minimum of an hour or overnight in the chiller.
    3. To cook the marinated beef, heat the oil in a saute pan.  I used a Cuisinart Chef’s Classic Stainless 5-1/2-Quart Saute Pan and it looks like this:
    4. Saute the other half of the minced garlic until fragrant.
    5. Add the marinated beef and cook until it is cooked through and the sauce has reduced enough to glaze it.
    6. Garnish with garlic chips and spring onions.

    • 1/2 kilo Beef Sirloin or Breakfast Steak (sliced into 1-inch pieces)
    • 1/4 cup Canola Oil
    • 1 1/2 tbsp Garlic Chips
    • 1 1/2 tbsp Spring Onions (finely chopped)
    • 1 tbsp Knorr Liquid Seasoning
    • 1/2 tsp Knorr Rostip Chicken Seasoning Powder

  • Easy Fried Rice Recipe | Bacon and Hotdog Fried Rice

    Here is an easy fried rice recipe.  Most of the stuff you will be needing to cook this recipe is in your freezer and your pantry.

    One day wife was away on a trip and I needed to do the cooking.  Unfortunately, I was too lazy to cook and decided to just fry some meat for dinner.  As I was checking what was on the fridge, I saw we had lots of left-over rice.  The rice was a good candidate for this easy fried rice recipe.  I checked the freezer and we had Purefood hotdogs and a packet of Purefoods Bacon Crumble.  This gave me an idea.

    We also had a packet of frozen mixed vegetables in the freezer.  Perfect!  In the pantry, I found eggs.  I am good to go!

    Instead of plain bland fried meat for dinner, I was able to serve something special with this easy fried rice.

    Ingredients:

    • 4 cups cooked rice
    • 5 pieces hotdog, sliced
    • 1/2 cup Purefoods Bacon crumble
    • 1/2 cup frozen mixed vegetables
    • 2 eggs
    • 1 tbsp. cooking oil
    • salt and pepper

    1. Heat oil in a wok or deep frying pan.
    2. Add the bacon crumble and cook until fat is rendered.
    3. Add the hotdogs and let cook.
    4. Add the frozen vegetables.  Mix well.
    5. Add the rice and mix thoroughly.
    6. Season with salt and pepper.
    7. Crack the eggs and pour on the rice mixture.  I find that pre-scrambling them is an unnecessary step. They get scrambled just fine when you mix them into the rice.
    8. Serve and enjoy!

  • Hotdog Chao Fan

    Hotdog Chao Fan

    Chowking is a Philippine fast food chain.  It is the pioneer of the Asian quick service restaurant concept in the Philippines.  Chowking combines traditional Chinese cuisine with modern fast food service.  One of their best-selling meals is the Chao Fan.

    Food that Chowking sells are predominantly noodle soups, dimsum and rice toppings.  It is a light brown stir-fried rice mixed with meat bits with yellow egg bits and vegetables. It comes in Pork, Beef and Yangchow varieties.

    Of course the chao fan recipe is a corporate secret.  So this is my attempt to re-create the chao fan to get as close to the flavor as possible.  But in this case, I chose to use hotdogs for the meat to make it easier and more fun!

    Ingredients

    • 4 cups cooked rice
    • 1 tbsp garlic chopped
    • 4 pcs hotdog diced or cubed
    • 1 small shallot or onion minced
    • 2 eggs beaten
    • 1/4 cup green onion diced
    • 2 tbsp soy sauce
    • 1/2 cup green peas
    • 1/2 tsp sugar
    • 1/2 tbsp garlic chopped (for rice)
    • salt and pepper to taste

    Instructions

    1. In a large wok or frying pan, fry the hotdogs.  Set aside.
    2. In the same wok or frying pan, saute the onions followed by the garlic and green peas.  Set aside.
    3. In the same wok or frying pan, pour in the beaten eggs and scramble.  Mix the eggs while frying until they turn into small pieces.  Set aside.
    4. In the same wok or frying pan, saute the garlic.  Add the rice. Mix.
    5. Combine the soy sauce and sugar in a small bowl.  Add to the rice and mix thoroughly.
    6. Add in the fried hotdogs and sauted vegetables to the rice.  Cook a little further making sure that you mix it well.
    7. Season with salt and pepper.
    8. Add in the scrambled eggs and mix.
    9. Top with green onions.  Serve with fried pork siomai (dimsum) as in the picture (optional).
